Palet Breton With Orange Zests

 300 g Wheat flour
 225 g Unsalted butter
 200 g Caster sugar
 2 g Sea salt
 90 g Egg yolk
 7 g Baking powder
 20 g Orange zests

Mix flour, salt, orange zest, sugar & butter using the paddle until you get a “sandy” texture then add eggs to it and mix on second speed for a couple of minutes (do not over mix)

Roll up or flatten the dough on a floured surface to 1cm thick or half size of your desired tartlet / tart rings, cut with the tart ring itself and place on baking tray with the ring

Bake at 165 degrees until you get to a lovely golden brown colour
Remove the ring when you can before they cool down
