Scotch Pancakes Recipe

Portion size1 Serving

 400 g White Stoneground Flour
 8 g Baking Powder
 40 g Golden Sugar
 100 g Fresh Eggs
 600 g Fresh Milk

Recipe for 10 Scotch Pancakes

Place flour, sugar and baking powder into a mixing bowl, whisk to disperse ingredients.
Add eggs and half the milk, whisk slowly at the beginning then speed up to break all possible lumps then add the rest of the milk.
You should end up with a smooth runny batter.

Heat a small non-stick frying pan (15cm diameter) over a medium heat and add some vegetable oil.
Spoon in a ladleful of batter to cover the bottom of the pan.
Fry for about 90 seconds (bubbles on top will form and pancake will be strong enough to be flipped over), fry again for about 40 seconds.
